CUMIN

Cumin (Cuminum cyminum) is a small annual plant of the parsley family, widely cultivated in the Mediterranean region of Europe and in India. Primary cultivation of cumin is in Europe, Asia, the Middle East, and North Africa with India and Iran as the largest cumin exporters. The valued portion of the plant is the dried fruit called cumin seed, which is esteemed as a condiment. Cumin was known to the Egyptians 5,000 years ago and it was found in the pyramids. In ancient times cumin was a symbol of greed and meanness. Curiously, by the Middle Ages it was regarded as a symbol of faithfulness

CORIANDER

FENUGREEK

Fenugreek seeds are small, roughly angular, brownish yellow seeds, which have a pleasantly bitter flavour and strong aroma. The seeds are often toasted to enhance their pungent aroma, and then powdered alone or with other spices. In Indian cuisine, fenugreek seed is a common ingredient in curry powders and pickle powders. It is also used to temper various vegetable and dal based dishes to enhance the aroma and taste.

FENNEL SEEDS

TURMERIC

Turmeric is not just a quintessential spice in curries, but it has a plethora of health benefits too. Curcumin, the main compound present in turmeric has excellent anti-inflammatory, antiseptic and antioxidant properties. RED CHILI

Chilli is the dried ripe fruit of the genus Capsicum. Capsicum annuum is an annual sub –shrub, the flowers of which are borne singly and fruits usually pendent, which provide red peppers, cayenne, paprika and chillies and sweet pepper (bell pepper) a mild form with large inflated fruits.

GREEN CADAMOM

If pepper is the "King of Spices" then cardamom is the "Queen of Spices". One of the most exotic and highly prized spices, Indian green cardamom or small cardamom (choti elaichi) has a history that is as old as human civilization.
 
The dried fruit of aherbaceous perennial, green cardamom is grown mainly in Kerala, Tamil Nadu and Karnataka, on the shady slopes of the Western Ghats. Warm humid climate, loamy soil rich in organic matter, distributed rainfall and special cultivation and processing methods all combine to make Indian green cardamom truly unique in aroma, flavour and size thus rendering the temping parrot-green colour.

BLACK CARDAMOM

Black cardamom is a popular Indian spice, called badi elaichi or kali elaichi, that is used in many of the cuisine's signature dishes. It is in the form of seed pods, which are dark brown to black in color and take on a smokey flavor due to the way they are dried. Cardamom is used for its bold and assertive taste and is the world's third-most expensive spice, surpassed in price per weight only by vanilla and saffron. Both the pods and the seeds are used in cooking and available year-round.
